Juniper Pork

Delicately flavour with juniper berries and sweetened with Pimentos, this is a light dish which would complement a wine from the middle Moselle.
 

Serves 4 
1 )12 thin slices of pork fillet  
2) 10ml /2 tsp juniper berries, crushed salt and ground black 
Pepper.
3) 100g /4 oz butter 
4) 60ml /4 tbls white wine 275g /10 of fresh green beans, topped and tailed 350g/ 12 of canned pimentos 10 ml/2 tsp sugar.

Directions 
1)put the slices of pork fillet between two sheets of greaseproof paper and beat with a meat bat or rolling pin until they are really thin. Season with the crushed juniper berries and salt pepper. 
2) melt the butter in a large frying pan over a low heat and add white wine, letting it bubble for 1-2 minutes. Place 3-4 slices of pork in a pan, in one layer. Sauté for 3-4 minutes each side, remove and keep warm. Repeat until all the slice are cooked
3) Add the beans and cook for 5 minutes over medium-low heat. 
4) Stir in the pimentos and the sugar and cook for a further 4-5 minutes. Season the vegetables and pile onto a serving platter. 
5) Lay the slice of pork on top of the beans and pimentos, pour over the remaining pan juices and serve immediately. 
      45 minutes
